How to preserve flour at home to keep it nutritious and fresh

Whole grain is made up of three parts: Bran, Germ, and Endosperm.

  • Endosperm: the endosperm contains complex carbohydrates and protein to provide energy.

  • Oxidation: If exposed to moisture, heat, or oxygen, the natural oils usually degenerate. Because of this, the atta starts to smell and taste sour. Whole grain flour oxidizes faster than refined flour as it contains the complete grain.

  • Pests: If kept in the open, the nutrient-rich whole grain atta, may attract pests and insects, such as fruit flies and weevils who love feeding on the atta.

    1. Use an Air-tight Container: Store flour in a container that has an air-tight lid to prevent air, moisture, and odors from getting in. You can use Glass jars or food-grade plastic containers with tight lids that work well.
    2. Keep it cool: Store flour in a cool and dry place to prevent it from going rancid. You can store the container in the pantry or cupboard, but avoid exposure to direct sunlight. You can even refrigerate it if you want to use it for many months. 
    3. Store it away from heat: Store atta away from the heat source, such as the stove, oven, or direct sunlight, as heat can cause the flour to spoil faster.
    4. Use it within its shelf life: Even though refrigerating atta helps increase the shelf life. We recommend you use atta within its shelf life to eat fresh and aromatic rotis.
