Indian cooking Tips: How to Keep Chapati Dough Fresh For Long

Chapati, also known as Roti, Phulka, or Indian Flatbread, is a staple in most parts of India. In a lot of households, it is consumed twice a day for lunch and dinner. Some people make Chapati dough in big batches so that it can be used for multiple meals.

Steps to Keep Dough Fresh 

  • While Kneading the Dough 
    1. Usage of Water: 
      • Use Lukewarm water for kneading the chapati dough as it makes the rotis soft. Pour the water little by little to make sure it attains the right texture and consistency. knead the dough for 5-10 mins
      • Consistency of your dough consistency is not too loose or too dry as both are prone to spoil faster.
  • Storage Preparation
    1. Ghee or Oil Coating on the Dough Surface: Make a round dough ball and brush the dough with a thin layer of ghee or oil before placing it in your storage container. The oily layer prevents it from coming in contact with air and may prevent the atta from blackening and drying.
    2. Cover the atta with Kitchen Towel or Cloth After you're done kneading and using the dough, cover it with a clean Kitchen cloth or food-grade cling wrap before putting it in a container. Make sure that you cover the dough completely so that no air bubbles remain inside. 
  • Storage
      1. Put it in Air-Tight Container:  Put your dough in an airtight container made of steel, glass, or food-grade plastic. An airtight container will keep air and moisture out of the dough, preventing it from drying out, oxidizing, or spoiling.
      2. Refrigerate the Dough: Place the air-tight container containing the dough in the refrigerator. This reduces airflow and slows oxidation.

      • Using Stored Dough for Making Roti 
        1. Let it settle: When you are ready to make the rotis, remove the bowl from the refrigerator and set it aside for at least 30 minutes to allow the dough to come to room temperature.
        2. Knead it again: Knead the dough for a few more minutes to make it soft and elastic.
